Sandwichon

At first sight, this may look like a cake, but  beware this is no sweet dessert. In fact this a very tasty meal known as un Sandwhichon. A Sandwichon is multi-layered sandwich with different types of meats and spreads all covered by a cream cheese icing and topped off with fruits or vegetables. The Sandwichon is popular in  the Latino culture and usually served at baby showers or children’s birthday parties.

This recipe is easy and fun to make and serves large parties. If you have never tried it, I encourage you to give it a try! As you take a bite into this layered goodness, you will get an explosion of flavors from the sweet juice of the pineapple to the creamy chicken salad. Definitely worth making and trying.  Enjoy!

 INGREDIENTS – Serves 4 to 5

1 loaf of white bread

12 oz of ground chicken

1 bar of cream cheese

1 can of Cheese Whiz (cheese dip)

1 can of mixed vegetables

3 cans of Spam spread

4 tbsp of mayonnaise

1 tub of whipped cream

1 can of sliced pineapples

6 cherries

2 tbsp of chopped pecans

First you remove the crust from your white bread

Next you need to make the chicken salad spread. The chicken salad spread is a delicious mix of of shredded chicken, mixed vegetables, and mayonnaise. For this recipe, I boiled four chicken drumsticks and shredded them using a food processor.

Next, make the icing for the sandwichon. The icing is made with a tub of whipped cream and one bar of cream cheese.

Beat in to a nice creamy texture. The icing should be slightly bumpy and more tart than sweet.

Now lay down the first layer of bread. This sandwichon is going to be a 3x2x3. Sizes are based on your preference and party size.

Next comes the fun stuff that is layering this beauty with meats and spreads. First spread the chicken salad and cover it with another layer of bread.

Next layer is the cheese dip and the spam spread. Make sure to apply all spreads generously to cover up any crevices.

Add another layer of bread and cover this one with chicken salad. Spread over the bread in a nice even pattern.

Now cover this layered trifecta with the creamy spread

Finish the sandwichon off  with slices pineapple and cherries above each slice of bread and  then sprinkle  chopped pecans.

The sandwichon is usually cut and served by the slice, so one serving might have three whole layers and three slices of bread. Enjoy this treat with a tasty side of classic potato chips and your favorite ice-cold  beverage. Buen provecho!

  1. I do a layer of chicken salad with grapes and fruits and nuts in it. Then I do a layer of pimento cheese from the store. Then a layer of ham salad with onion and celery and olives and such . I use layers of white and brown bread. When you make a big one, it is good to glue the bread together with the icing to make it sturdier. I also off set the bread layers so the center will not sink in. I also use some mayo in the icing. I make it on a cake board using wax paper triangles under the first bread layer so that I can remove the messy bits. I learned this last trick in cake decorating class.
    So bread, chicken salad, bread, cheese, bread, ham salad, bread and icing. Such a great party food or good for a business meeting ( how I discovered it)
